One of the best references is the "Zero", a sparkling wine made in the "Methode Champenoise". The 2019 vintage is a blend of 68% Pinot Noir and 32% Chardonnay. During the production, quality was uncompromisingly emphasied throught the highest possible degree of manual work. No effort was too great for the "Grande Cuvee": Hand harvesting, whole bunch pressing, fermentation in used barriques, long malolatic fermentation, classice fermenation wiht 18 months of yeast storage. The long yeast autolysis gives the wine a fine bubley mousseux, subtle brioche notes and a powerful extract. No shipping dosage was used, a blassec "Zero Dosage".
